Finding a Christian short-term placement in France requires patience and perseverance!  Most probably, you'll be available during the summer months, which is when most French churches reduce their activities and when they are the least likely to need you!  But several Christian organisations run evangelistic teams during July and August.  A good first step is to try these websites:
